Soup base:
- Coconut cream: 250ml
- Water: 125ml
- Fish sauce: 1 tablespoon (15ml)
- Coconut sugar: 15g

Step 1: Preparing Ingredients for Smooth Cooking

1. We begin by preparing everything before heating the cooking vessel. The chicken is sliced thin so it cooks quickly and stays tender.
2. Tomatoes are cut into wedges to help release mild sweetness during cooking. Mushrooms are halved to keep a pleasant bite. Onion is sliced thin to blend smoothly into the broth later.
3. For aromatics, lemongrass is lightly crushed with the back of a utensil to release fragrance, then cut into sections. Galangal is sliced thin. Citrus leaves are torn after removing the center stem to avoid bitterness and improve aroma release.

2. Coconut sugar (15g) is stirred in to balance the flavors.
3. Next, chicken slices and onion are added. The pan is covered and cooked on low heat for about 6–10 minutes. Thin chicken slices cook quickly, turning soft and tender while absorbing the coconut aroma.
4. The soup gradually becomes richer and more unified in texture.

Step 5: Final Seasoning and Bright Flavor Finish

1. When the chicken is fully cooked, fish sauce (1 tablespoon) is added and gently stirred in.
2. Then torn citrus leaves are added again for extra fragrance. At this point, the heat is turned off.
3. Fresh lime juice from half a lime is squeezed into the soup. A small amount of lime peel can also be added for extra aroma. This step brings a fresh, bright lift to the creamy base.
4. If a mild spicy note is preferred, one chili can be added whole during cooking or sliced for stronger heat.
