Step 2: Combining ingredients and initial heating

Step 3: Cooking and thickening the mixture

2. We continue stirring regularly to prevent sticking and to ensure even cooking. The mixture will gradually change:
- First, it becomes thinner and more fluid
- Then it starts bubbling evenly
- Finally, it slowly thickens and becomes glossy
3. This process takes around 30–40 minutes.
4. To check readiness, we can use a kitchen thermometer. When the mixture reaches about 220°F (104°C), it is ready for the next step. If we do not have a thermometer, we can also test by placing a small drop on a cold plate—if it thickens after a short moment, it is ready.

Step 4: Preparing jars for filling

1. While the mixture cooks, we prepare the jars. We wash them with warm water and let them dry completely.
2. Once the apricot mixture is ready, we carefully pour it into the warm jars using a ladle. We leave about 1/4 inch (0.5 cm) of space at the top.
3. Then we gently wipe the rim of each jar with a clean damp cloth. This helps ensure a clean seal later.
4. We place the lids on top and tighten them evenly, but not excessively.

Step 5: Heat sealing process

1. We place the filled jars into a large hot water bath. The water level should be about 4 inches (10 cm) above the jars to ensure even heat coverage.
2. We bring the water to a gentle boil and process the jars for about 10 minutes.
3. This step helps create a vacuum seal inside the jars, which keeps the spread fresh for longer storage.

Step 6: Cooling and setting

1. After heating, we carefully remove the jars and place them on a cooling rack or a clean towel.
2. As they cool, we may hear soft popping sounds. This is completely normal and indicates that the jars are sealing properly.
3. We let them rest overnight without moving them.

How we can enjoy it later

Once fully set, the apricot spread becomes thick, smooth, and easy to use. We can enjoy it in many simple ways:
- Spread on toast or warm bread
- Pair with pancakes or waffles
- Stir into yogurt or oatmeal
