This mango chia pudding is a simple chilled dessert that we prepare the night before and enjoy the next day. It is creamy, lightly sweet, and layered with fresh mango flavor. The texture comes from chia seeds, which naturally swell when soaked, creating a thick pudding base without any cooking.
What makes this recipe special is its balance. We get the smooth richness from coconut milk and yogurt, natural sweetness from mango, and a gentle bite from chia seeds. It feels refreshing, but still satisfying enough for breakfast or a light snack.

Ingredients We Need (With Exact Amounts)

To make about 2–3 servings, we prepare the following:
Pudding base:
- Chia seeds: 1/4 cup (about 40 g)
- Coconut milk: 1 cup (240 ml)
- Thick yogurt: 1 cup (240 ml)
- Honey: 1 to 2 tablespoons (adjust to taste)
- Vanilla essence: 1/2 teaspoon
Fruit layer:
- Ripe mangoes: 1 to 2 pieces (medium size)
We choose mangoes that are soft, fragrant, and naturally sweet. This helps reduce the need for extra sweeteners.

Step 1: Prepare the Mango

1. First, we wash and peel the mangoes.
2. Then we separate the flesh from the seed using a spoon. We divide the mango into two parts:
- Half is cut into small cubes for topping
- The other half is blended into a smooth puree using a blender or food processor
3. The puree will become our fruity sauce layer, while the cubes will be used for decoration and texture.

Step 2: Mix the Chia Pudding Base

1. In a large mixing bowl, we combine:
- Chia seeds
- Coconut milk
- Thick yogurt
- Honey
- Vanilla essence
2. We stir slowly and evenly for about 1–2 minutes. This step is important because chia seeds can clump if not mixed well.
3. Once the mixture looks smooth, we let it sit for 10 minutes, then stir again. This helps the seeds distribute evenly before they start expanding.

Step 3: Chill Until Thick and Creamy

1. After mixing, we transfer the bowl into a covered container.
2. We place it in the refrigerator for at least 6 hours, but overnight (8–10 hours) gives the best texture.
3. During this time, the chia seeds absorb the liquid and expand, turning the mixture into a thick, spoonable pudding. When we check it the next morning, it should look creamy and slightly gel-like.
4. If it feels too thick, we can add a small splash of coconut milk and stir gently.

Step 4: Build the Layers

1. Now we prepare serving cups or glass jars.
2. We start by adding one layer of chia pudding at the bottom.
3. Next, we add a layer of mango puree and spread it evenly.
4. Then we repeat:
- Another layer of chia pudding
- Another layer of mango puree
5. This creates a beautiful contrast of creamy white and bright yellow-orange.

Step 5: Final Decoration

1. On the top layer, we add mango cubes.
2. We can gently place them using a spoon for neat presentation.
3. For a smoother finish, we can also drizzle a little mango puree over the top. This adds extra color and flavor.

Serving and Enjoying Together

This dessert is best served chilled. The contrast between cool pudding and fresh mango makes every bite soft, fruity, and refreshing.
Lykkers, what we love about this recipe is its simplicity. No cooking, no complicated tools, just mixing and waiting. It fits perfectly into a busy day because everything is prepared ahead of time.
We can also personalize it easily. Some of us may prefer more coconut flavor, while others may add extra fruit layers for variety.
At the end of the day, this mango chia pudding reminds us that simple ingredients can create something truly satisfying when combined with care. If we try it once, it often becomes a regular favorite in our kitchen routine.
